Kraft Foods introduced "Jell-O Instant Pistachio Pudding" in 1975, and one of the recipes developed by the Kraft kitchen was the "Pineapple Pistachio Salad". Somewhere along the way, this same salad evolved to be known as the "Watergate Salad", and Kraft Foods thinks that it had to do with a columnist who wanted to bring some extra interest to the recipe, so she named it that to correlate with the infamous political scandal involving President Nixon at the time. (Pretty genius really!) Because so many people were requesting the recipe from Kraft by that name, it simply stuck and has been regarded as the "Watergate Salad" ever since! Why it's called a "salad" to me is questionable, because it's really a dessert, and a very quick and simple one to make. In fact, Kraft still prints the recipe on the side of the pistachio pudding box, but I have posted an old newspaper printed submission of the original recipe in the graphic above.
The salad became so wildly popular that there has even been a "Watergate Cake" using the same pistachio instant pudding and ingredients, along with the "Cover Up Frosting" to go with it- how funny is that?! Soon, I will be posting a dessert I've come up with to pay tribute to this old favorite.
So, if you're feeling a bit "scandalous", and want to try a great retro dessert, make this oh- so- yummy "salad" some time! ( Because of it's green color, it's also quite popular for St. Patty's Day as well!)
