Total prep time: 30min. or less!
2- 2 1/2 lb. chicken (cooked & cubed or shredded)
1/4 onion (diced or minced)
1/2 stick of butter or margarine (4T.)
4T. of flour
1- 32oz. container of chicken broth or stock
1- 12oz. bag of frozen mixed vegetables
Parsley, salt, & pepper to taste
1 pkg. of pie crust or puff pastry
**Optional: Egg Wash (1 Yolk & 2T Water)
**Note: Chicken can be either cooked earlier in the day, or you can use a purchased Rotisserie chicken from your local grocer or market to make it even easier!
Preheat oven to 350F for pie crust /or 400F for puff pastry
Saute your onion in the butter. When onion starts to look "translucent", add your flour, and mix well. Cook flour mixture for about 30sec. Slowly whisk or stir in the chicken broth, and season with parsley, (fresh or dried), salt & pepper. Bring to a simmer. Add the frozen veggies, and cooked chicken. Simmer at medium heat, stirring occasionally, and turn down to low when the mixture begins to thicken. In the meantime, take out the pre-made pie crust of your choice, (there should be 2 separate pkg.),roll out a bottom and place in either a casserole dish, or a 13x9 pan, and prick all over. Roll out the top on a floured surface, (whether round or square to fit the size of your pan), and place on a parchment lined sheet tray, to bake separate from your dish/pan. Mark with a "C" for chicken. (If round, flute the edges- or no need to if square. It's up to you!) If you would like to brush the top piece with the egg wash- do so at this time. (Especially if using puff pastry!) For pie crust, bake the top & bottom crust @ 350F for about 10-12min., (or until golden brown.) If using puff pastry, you will need to follow instructions on box, but should bake @ 400F for about 10-15min. Take the thickened chicken filling off the stove, carefully spoon or pour into serving dish with crust on bottom. Take the top crust (baked separate), place on top of chicken filling, and serve! No need to bake the filling & crust together- this method speeds up the prep time, and is just as flaky and delicious!
**If you prefer doing a different mix of veggies, by all means, add what you like best! You can even do a broccoli and cheese pot pie, by adding in about 1 cup shredded cheese to the filling mixture, and using fresh or frozen broccoli instead of the mixed veggies!
