Serves 4-6 people
**Prep time is 20- 30min. or less!!
1/4 diced red onion
1 minced garlic clove
1- 1 1/4# cubed beef (some grocers sell pre-cut for time-saving!)
1- 14.5 oz. can of petite diced tomatoes
1- 32oz. container of beef broth
1- 15 oz. can of red beans or kidney beans (drained)
1 1/2 cups of frozen green beans
1 cup "Barilla" Ditalini pasta
1t. fresh or dry parsley
1t. fresh or dry basil
salt and pepper to taste
1) In a 4qt. pot, drizzle in some olive oil, (about 2-3 T.), and heat at medium. Add onion and garlic, and saute for about a 1-2 minutes, then add the beef, season with salt and pepper, and cook until no more pink is showing.
2) Add the can of diced tomatoes and stir. Pour in full box/container of beef broth, and add can of beans.
3) Bring the soup to a low simmer. Add the frozen green beans, Ditalini pasta, parsley & basil. Simmer on medium to low heat for about 15 min. Add more salt and pepper to taste. Remove from heat, and serve with some fresh rolls, whole grain bread, or garlic bread of your choice. Delicioso!!
