1- 8oz. pkg. of "Simply Balanced" Red Quinoa (rinsed)
2 T olive oil or butter
dash of salt
1 3/4 c. of water or chicken broth
2 green onions (sliced fine)
1 t. minced garlic ( or 1 clove of minced garlic)
about 1 T. chopped fresh parsley
1 can of chick peas (Garbanzo beans- drained & rinsed)
1/4 cup of chopped toasted walnuts
**salt & pepper to taste
1) In a medium saucepan, combine the quinoa, water or broth, olive oil, dash of salt, onion, and garlic, and heat on medium to high until it comes to a boil.
2) Cover, turn heat down to low, and simmer for about 10min.
3) Add the can of chick peas & parsley, and continue cooking for another 5-10min., (or until no more liquid remains.)
4) Sprinkle toasted walnuts on top prior to serving!
