Creamy Bacon Dressing: Yields 1/2cup
1/4 cup Plain Greek Yogurt
1 T. of Red's Bacon Jam
1 T. Grapeseed Oil
2-4 T. Buttermilk or milk
fresh parsley (chopped)
dash of Worcestershire Sauce
Salt & pepper to taste
1) Combine the yogurt and bacon jam, and whisk well. Add in the remaining ingredients. Dressing should be just thin enough to drizzle over salad. Keep the additional dressing refrigerated for up to 1 week.
For the Salad: Make how ever small or large you would like!
Baby Kale (rinsed & washed)
red onion (sliced)
baby bella mushrooms (sliced and cleaned)
1 can mandarin oranges
dried cherries or cranberries
pecans, croutons, or sunflower seeds
1) Lay your kale on the plate first, and simply top with the above fruits & veggies! Drizzle dressing on top and finish with the pecans. Voila!!
