Oh, and did I mention that this would make an amazing gift for the upcoming holiday season? (I realize it's early, but never too early to start thinking and getting ideas!) Homemade gifts are the best- especially those that are delicious and unique!
Yields: About 2 cups
Red's Bacon Jam:
1 1/2 # of cooked bacon (cooled and chopped)
1 medium onion (sliced or chopped)
2 cloves of garlic
pepper & dash of salt ( ***since bacon is high in sodium, only a small dash of salt is needed!)
1 cinnamon stick
1 dried chile arbol (slit the chile to remove the seeds) **Like it hot? Add 1 or 2 more!
1/3 cup packed brown sugar
1/4 cup of apple cider vinegar
1/4 cup of coffee
2 peaches (peeled, pitted, & quartered)
1 12 oz. bottle of Dark beer (**I used Atwater Brewery's "Vanilla Java Porter")
1) In a medium pot, place about 1-2 T. of bacon fat or oil, and saute the onions and garlic until translucent. Add all of the remaining ingredients, and simmer on medium heat until the contents thicken, and are reduced- making sure to stir occasionally. Remove from heat and allow to cool for about 20-30min.
*** The cooking time will be about 1- 1/2 hours.
2) In a food processor, puree the reduction, transfer to a mason jar or airtight storage container, and store in the refrigerator for 1-2 weeks. **If you find that your "jam" is a bit too thick after being in the refrigerator, you can add a bit of additional peach jam, or a little maple syrup to adjust the consistency. Super delicious!!!
