Yields: 4 servings (as a side dish)
2 cups of elbow or shell pasta
2 T. of butter
salt & pepper to taste
1 cup (8oz.) of cottage cheese (small curd)
1/4# of cooked bacon (sliced or crumbled)
**Scallions or parsley for garnish (chopped)
1) Cook the bacon. (I bake mine on a foil lined sheet tray for 20min. at 350F.) Allow to cool. Remove excess grease, chop or crumble the cooked strips, and set aside.
2) Simply cook the pasta according to directions on box. Drain off water, add the butter and stir until melted. Place on heat (low), add the cottage cheese, and stir until cheese begins to melt. Remove from heat and season with salt & pepper to taste. You can either mix the bacon in, or serve on top of pasta. Sprinkle on parsley or scallions, and serve immediately! ***Note: to make extra creamy, you can a few tablespoons of milk or cream when adding the cheese.
