***Prosciutto (and Italian ham), is found at most grocers in the deli meats, or import cheese section.
Cucumber ("ribbons" or sliced)
Mini orange or yellow sweet peppers (julienned)
Asiago cheese (shredded) or your favorite cheese
Prosciutto (or any other ham, bacon, or chicken)
**Optional- basil leaves for garnish, or for "crunch", garnish with some sunflower,pumpkin seeds, or nuts.
Cherry Lime Vinaigrette: Yields about 1 1/4 cup of dressing
Zest and juice of 1 1/2 limes
1/4 cup of fresh pitted cherries
1 T. honey
Salt & pepper to taste
1 T. fresh sliced basil leaves
1 cup Grapeseed oil (or olive oil)
1) In a blender, add the lime juice, zest, cherries, honey, and some salt & pepper. Blend until cherries are finely pureed. Stream in the oil, and blend until well emulsified. Adjust seasoning if necessary.
**Store the vinaigrette in a mason jar or other sealed container for about 2-3 weeks in the refrigerator. Shake well before using again.
2) Assemble the salad, and drizzle vinaigrette on top! For the prosciutto rose, simply fold a piece of prosciutto in half, and roll to resemble a rose. If you don't want to mess with that, than just cut your prosciutto or meat into cubes or strips and sprinkle on salad. Serve, and enjoy!
