I have added these little guys to some of my previous recipes, as a great nutritional booster. But, this pudding is by far one of the greatest ways to enjoy them! The best thing about this pudding, is not only how incredibly delicious and healthy it is, but also how incredibly EASY it is to make! Really, it's as simple as adding all of the ingredients in a blender, (this prevents the chia seeds from "clumping" together, and also activates the "thickening process" faster), blend for 20 sec. or so, and voila! Pour it into a 2 quart container to set overnight, and your good to go! I made this all-natural and healthy, but, instead of adding cocoa powder and honey, you could just add some Hershey's syrup in combination with the other ingredients. Now, if you have dairy allergies, or are lactose- intolerant, simply omit the yogurt either all together, or add in some soy or coconut milk yogurt. (The yogurt isn't necessary, but it does add a bit more body and creaminess to the finished product!) In terms of cost, chia seeds can be pricey- depending on where you buy them from. But, they are highly worth it, as they are; high in protein, iron, fiber, and a great source of energy. OMG, you simply can't pass this treat up!
Yield: 6-8 servings
2- 2 1/2 cups of Blue Diamond Coconut Milk (Or any kind of milk is fine to use!)
**Could also use canned coconut milk as well
1/2 cup of Plain or Vanilla Greek Yogurt
1 t. Almond extract
4 t. cocoa powder **Use Dark or a high quality kind if possible!
4T. + of Honey or Agave Syrup
1/2 cup of Chia Seeds
About 1/2 cup of toasted sliced almonds
About 1/2 cup of toasted shredded coconut
1) Simply place all of the ingredients into a standard blender, and blend for about 20-30 sec. (If you don't have a blender, you could either use stick blender, or stir by hand.)
**Check the flavors, and adjust to your taste by adding more sweetener, etc. The pudding will thicken almost instantly, so you can adjust the thickness by adding more seeds to thicken, or more milk to thin, etc.
2) Pour the pudding into a 2 quart jar or storage container and refrigerate overnight, (or for a couple hours to really set.)
3) When ready to serve, simply layer in a glass or jar by spooning some of the chocolate pudding into the bottom, then sprinkle some toasted coconut and almonds on top. Spoon a second layer of pudding over the coconut & almonds, and finish by sprinkling a bit more almonds and coconut. If you really want to go crazy, drizzle some chocolate or chocolate syrup over top. Enjoy for breakfast, snack, or for dessert! Hard to believe it's so good for you!
