Yield: 12-16 Bars (about a 3/4 inch thick)
1 cup Almonds (or any other nut of your choice)
2 t. ground cinnamon
3 T. Brown sugar
4 T. unsalted butter
pinch of salt
2 cups of Oats
1 ripe banana
**If doing layered bars: 1/4-1/2 cup of Apple Butter or Jam
1- greased 8x8 pan
Preheat oven to 350F
1) In a food processor, place the almonds, cinnamon, pinch of salt, and sugar, and pulse to chop the nuts. Add the butter, and pulse a few times to blend. Add the banana and process to combine. Add the oats last, and just pulse a few more times to get the dough blended- without processing the oats too fine. Remove the mixture.
**If you don't have a food processor, just mix these by hand! Make sure the nuts are ground, and the banana is mashed when adding to
**If not layering, simply spread the dough evenly in a greased 8x8 pan.
**If layering: divide the dough in half. Spread half of the dough evenly in the bottom of a greased 8x8 pan. Then, spread a nice even layer of apple butter or jam on top. Carefully, plop spoonfuls of the remaining dough randomly over the apple butter layer. Carefully try to spread the dough to cover the apple butter layer.
Bake bars at 350F for 15 minutes. Remove and allow to cool for 15-20min. before slicing.
**Store in an airtight container for up to a week!
