(In the picture above, I've demonstrated two ways you can serve it: by spreading on a thinly sliced cucumber and rolling it, or spreading it over some sliced Monterey Jack w/ red pepper on a flatbread cracker, and garnish with some sliced cherry tomatoes.)
Yield: About 5 cups (8-12 servings)
4 cups of cubed or chopped cooked Ham (Smoked or Honey)
2 hard boiled eggs (peeled)
1 stalk of fennel (finely chopped)
**Optional: 1-2 Scallions or 1/4 onion (finely chopped)
1 T. Spicy mustard (whole grain)
2 T. Dill Relish
1/2 cup- 3/4 cup Mayonnaise
1 t. Smoked Paprika
Salt & pepper to taste
Couple "Dashes" of Hot Sauce
1) Using a food processor, place the ham and eggs in. Turn on low, and process for about a minute, stopping every 15sec. or so to check the texture. You don't want it fully pureed like a paste! It should still have a bit of "flake" or texture to it.
2) Remove the mixture, and place in a bowl. Simply add the remaining ingredients, and mix well! You can adjust the texture of the spread by adding more mayo, and adjust the seasoning or spice as you like it!
3) Make sure to cover, and place in the refrigerator until ready to serve!
Spread on bread, crackers, stuff in hard boiled eggs, or vegetables!
**Keeps for about 5-7 days.
