The colors of this salad are just "eye popping"- so simple and quick to throw together, but yet so elegant and impressive for any meal or event! (Would be especially fabulous for an outdoor garden party/ dinner!)
***The day lilies I used have never been sprayed with pesticides/ herbicides, and were from my own garden! Please make sure to only use fresh and organic day lilies for your salad!
Yield: 6-8 servings
Orange Black Sesame Dressing:
2 T. black sesame seeds (ground)
juice of 1 orange
honey (about 1 T.)
1/2 t. of fresh grated ginger (can use ground if you don't have fresh)
dash of teriyaki sauce
1/4-1/2 cup of Mayo
1) Using a coffee grinder or small blender, grind the sesame seeds fine. (Unless you were able to find already ground seeds in the store.)
2) Simply take all of the above ingredients in a small bowl and whisk together. Adjust flavor to your taste. Refrigerate and cover until ready to use.
Day Lily Salad:
5-7 oz. Baby Arugula or other salad greens (Cleaned and dried)
4-5 fresh day lilies (petals separated, stamens removed, and lightly rinsed in cold water/ dried)
1 cup fresh blueberries
1 cup of sliced fresh strawberries
1 cucumber (sliced)
1/4 red onion (chopped or thinly sliced)
1 cup of roasted/ salted pistachios
1/2 cup of dried cherries or cranberries
***Additional ingredients: tofu/ cheese, chicken, steak, pork, fish, edamame, snow peas, sugar snap peas, carrot, peppers, mushrooms, bean or alfalfa sprouts, chia or pumpkin seeds, etc.
1) The salad can either be plated, or composed in a larger serving bowl or platter, (depending on how you would like to serve it!) Simply layer the ingredients beginning with the arugula, then day lilies, blueberries, etc.
The dressing is best left to drizzle over after having been plated- not mixed in! (If serving buffet style, place the dressing next to the platter or bowl of salad for the guests to add themselves.)
***Note: day lilies are delicate, and will break down once refrigerated! If putting the salad together ahead of time for an event, place the day lily petals on last- right before serving so they look they're best!
***Dressing can easily be doubled, tripled, etc. for larger quantities.
This salad is best enjoyed fresh/ immediately! Orange Black Sesame Dressing will keep fresh stored in an airtight container for 1-2 weeks.
