About "red" the 6 layers of Red
I am a classically trained pastry chef, (which means I'm formally trained in French cuisine), and I graduated Magna Cum Laude with an Associates in Applied Science, along with my Food Service/Hospitality: Culinary Arts Degree in 1995. Most people know me as Heather Modell. I currently, (and for the past 10 years), produce a cake on the menu at "The Portside Inn" of Marquette, MI called the "6 Layer Chocolate Mousse" cake, and have been making cakes/pastries for over 25 years! Although I've worked in various restaurants and bakeries, the pinnacle of my career was the 3 years I spent at "The Palace of Auburn Hills" outside of Detroit, MI from 1995-1998. The experience I gained as "Executive Pastry Chef" in those 3 years was beyond phenomenal! But, life took a turn, and I moved to the beautiful, (but very cold), Upper Peninsula of MI, and have been here ever since!
**I am a "free-hand" drawn cake artist. I do not use projectors or transfers for any cakes I've ever produced.
I've won various medals throughout high school and college in competitions/ Culinary Salons. I took the Gold Medal in the 1994 MRA-MCAA Culinary Art Salon held in Detroit- for the "Australian Lace" cake I entered.
I was the first ever female chef appointed at the Palace of Auburn Hills back in 1996. I competed against two male associates for the position, so I earned it! (A HUGE accomplishment at that time!) I was responsible for menu development & heading up the production of ALL dessert items to furnish suites, sponsor parties, VIP/ teams/celebrities & their crew, 4 restaurants, Pineknob, (now DTE Energy), Meadowbrook, and floor parties. (I once did a plated dessert for 1,000 people we had on the floor of the Palace for a private party!!) Just to give you insight, I kept records of sales for my department and the total sales of desserts for just the 97'-98' Detroit Piston Season was over $95,000! (That did not include all other events....just the Piston games!)
While at the Palace, I made personal cakes for Grant Hill, Gordie Howe, Joe Perry of Aerosmith, vegan desserts for "Prince", a special plated dessert for the President of Spain's delegate dinner, (held at "Guardian World Headquarters), and too many more to list!!!!
I also represented the Palace in several Fundraisers, including the "Chocolate Jubilee" for Alzeimer's at the Ritz Carlton in Detroit, MI in 1997.

I am the eldest of 6.
I married my high school sweetheart in 1996.
I'm a mother of 4 beautiful children, (ages 16yrs.- 7 yrs.)
I'm a volunteer: Girl Scout leader/ Service Team Member, (as well as Alumni), librarian at my son's elementary, and usher at church.
I'm a Pastry Chef, Event planner/ promoter, RevOILutionist, and also currently a bartender and Asst. GM of Remies Bar (the family business.)

Did I mention I have "red" hair?!! (Although my hair was more bright orange most of my life...it seems to fade the older I get! Gasp- I'm 43!!)
I enjoy working out at the gym! It wasn't easy, but after 4 pregnancies, years of delicious desserts, and dealing with "yo-yo" weight, it was time to make a change with fitness, and eating "cleaner"- and I feel so much better!!
I LOVE THE ARTS!! I truly enjoy art in all forms: food, paint, sculpture, interior decorating, Victorian architecture, and a diverse range of music!
My Aunt Linda worked at the "Detroit Institute of Arts" for over 20 years, and I was fortunate to experience many fabulous exhibits and plays!
Gardening and landscaping is by far one of my greatest passions in the spring and summer- (which is VERY SHORT in the U.P. of MI!)
(My dad is a Horticulturist, and so a couple of my first jobs involved working in "Landscape & Garden" stores.)
Geneology and Ancestry research is another big hobby of mine. I'm a lover of history and culture, and feel it's important to understand the lives of those who've gone before us! (I'm also a huge "Titanic" history buff!)
I love to sing! Before my first child was born, I sang in the church choir.
I also love crafting! Since I can remember, I've been sewing, gluing, painting, and making all kinds of stuff. I enjoy being creative!
Volunteering with the Girl Scout organization and in the community is another interest of mine. Giving back- it's what it's all about!!
