Although most people associate this liqueur with drinking "Southern & Coke", it also makes an excellent ingredient in barbeque sauce!
There's nothing like a really good, sweet, tangy, barbeque sauce to take your meats to "flavor town" status! I made this to slather all over a pork tenderloin that was dry rubbed before cooking, but would most certainly be excellent on any cut of pork, chicken, or fish as well. (See the pic below!)
This sauce is easy to make, and the only real time involved, is just letting it reduce down to that nice, and thick, consistency! Wow- this sauce really adds a "kick" of flavor! The alcohol cooks out during the reduction process, and leaves you with all the flavor of this unique liqueur, and blends together perfectly with the ultra tanginess of the apple cider vinegar, garlic, ketchup, sugars, spices, and the fresh, juicy, and ripe sweet peach......mmmm.....
Want to have extra for the next couple times you grill? Just double the recipe, and save any extra in a clean mason jar in the refrigerator for up to a month! Seriously good stuff! ****This should easily cover up to 4# of meat.
Yield: About 1- 1 1/4 cups
1 clove garlic (minced or chopped fine)
1/4 cup apple cider vinegar
1/4 cup **Southern Comfort (if you don't have on hand, use any brand whiskey)
1/4 cup ketchup
couple dashes of Worcestershire sauce
1 whole peach (skin & pit removed/ chopped)
2 T. molasses
2 T. brown sugar
1 t. chili powder
Salt & pepper to taste
**Note: I did not include onions in my sauce, but feel free to add 1/4 onion if you wish!
1) Place all of the above ingredients in a small sauce pot. Stir together, and cook on medium heat until it begins to simmer. Turn down to low heat, and cook until sauce is thickened/ reduced. If it gets too thick, simply thin with a little water. Adjust flavor to your taste.
Remove from heat, and can use sauce immediately, by brushing on meat with a silicone, or food grade brush.
Allow to cool before storing extra in refrigerator. Can store in a mason jar, or storage container with lid for up to 30 days.
